Comfort Cake

The "Comfort" in "Comfort Cake" comes from Grandma's dear friend, Southern Comfort.  This one probably isn't good for children.  I also assume you could substitute Irish whiskey, brandy, or dark rum and make a different kind of alcoholic cake.

Ingredients:
  • 1 Package Yellow Cake Mix
  • 4 Eggs
  • 3 1/2 oz. Package Instant Vanilla Pudding
  • 1/2 Cup Cold Water
  • 1/2 Cup Oil
  • 1 Cup Chopped Nuts
  • 1/2 Cup Southern Comfort
  • 1/4 Cup Butter
  • 1/8 Cup Water
  • 1/2 Cup Sugar
  • 1/4 Cup Southern Comfort

Directions:
  • Preheat oven to 325.
  • Combine cake mix, eggs, vanilla pudding, 1/2 cup cold water, oil, chopped nuts and 1/2 cup Southern Comfort and mix on medium speed for two minutes.
  • Pour into greased and floured bundt pan.
  • Bake for 60 minutes or until toothpick comes out clean.
  • Allow cake to cool.
  • Meanwhile, prepare glaze.
  • Melt 1/4 cup butter in sauce pan over medium heat.
  • Add 1/8 cup water and 1/2 cup sugar.
  • Heat until sugar is totally dissolved.
  • Add 1/4 cup Southern Comfort.
  • When cake has cooled, invert onto serving plate.
  • Pour warm glaze over cold cake.
  • Allow to cool again before serving.
