Pumpkin Cake

Ingredients:
  • 1 Package Yellow Cake Mix
  • 3 Eggs, Beaten
  • 1/2 Cup Oil
  • 1 Tsp. Baking Soda
  • 1/2 Cup Pecans, Chopped
  • (1) 30 oz. Can Pumpkin Pie Meat
  • 3 oz. Cream Cheese, Softened
  • 3/4 Cup Butter
  • 2 Cups Powdered Sugar
  • 1 Tbsp. Milk

Directions:
  • Preheat oven to 350.
  • Mix together cake mix, eggs, oil, baking soda, nuts, and pumpkin meat until well combined (approximately two minutes).
  • Pour into large, greased sheet cake pan.
  • Bake for 25 minutes.
  • Meanwhile, in large mixing bowl beat together cream cheese, butter, powdered sugar, and milk until light and fluffy.  
    • You can add pumpkin pie spice to frosting if desired.
  • Remove cake from oven and allow to cool.
  • Frost with cream cheese frosting.

Bready Pineapple

Ingredients:
  • 1/2 Cup Butter, Softened
  • 1 Cup Sugar
  • 4 Eggs
  • (1) 4 oz. Can Crushed Pineapple, Drained
  • 5 Slices French Bread, Cubed

Directions:
  • Preheat oven to 350.
  • Cream together butter and sugar.
  • Add eggs one by one, beating after each addition.
  • Add pineapple and mix until well combined.
  • Fold in bread cubes.
  • Bake in a greased casserole dish for 60 minutes.

Pecan Cake Squares

Ingredients:
  • 1 Package Yellow Cake Mix
    • Reserve 2/3 Cup of Mix
  • 1/3 Cup Butter, Softened
  • 1 Egg
  • 1 1/2 Cups Karo Dark Corn Syrup
  • 1/2 Cup Brown Sugar, Firmly Packed
  • 3 Eggs
  • 1 Tsp. Vanilla
  • 1 1/2 Cups Pecans, Chopped

Directions:
  • Preheat oven to 350.
  • Mix together all but 2/3 cup cake mix, butter, and one egg until well combined.
  • Spread into 13" x 9" cake pan.
  • Bake for 15 - 20 minutes or until light brown.
  • Meanwhile, mix reserved 2/3 cup cake mix, Karo syrup, brown sugar, three eggs, and vanilla until well combined.
  • Remove cake from oven and pour reserve mixture over top.
  • Sprinkle chopped pecans over the top.
  • Return to oven for another 30 - 35 minutes.

Easy Cheesy Lemon Bars

Ingredients:
  • (1) 17 oz. Package Lemon Cake Mix
  • 1/2 Cup Melted Butter
  • 1 Egg, Slightly Beaten
  • (1) 13.5 oz. Package Lemon Frosting Mix
    • I don't think you can actually buy this anymore.  I would say maybe substitute instant lemon pudding?
  • (1) 8 oz. Package Cream Cheese, Softened
  • 2 Eggs

Directions:
  • Preheat oven to 350.
  • Combine cake mix, butter, and one egg.
  • Mix with a fork until moist.
  • Pat into 13" x 9" cake pan that has only had the bottom greased.
  • Blend frosting (or pudding) mix into cream cheese.
  • Reserve 1/2 cup of frosting mixture.
  • Add two eggs to remaining frosting mixture.
  • Beat for 3 - 5 minutes on medium speed.
  • Spread over cake mixture.
  • Bake for 30 - 40 minutes.
  • Allow cake to cool and top with reserved frosting.

Extra Moist Upside Down Cake

Ingredients:
  • (1) 20 oz. Can Sliced Pineapple Rings in Juice
  • (2) 4-Serving Packages Instant Vanilla Pudding
  • 10 Cherry Halves
  • 4 Eggs
  • 1/2 Cup Firmly Packed Brown Sugar
  • 1 Package Yellow Cake Mix
  • 1 Cup Water
  • 1/4 Cup Oil

Directions:
  • Preheat oven to 350.
  • Drain pineapple and reserve juice.
  • Arrange slices in a 13" x 9" cake pan.
  • Place cherries in center of each slice.
  • Combine one package of pudding with reserved pineapple juice and mix well.
  • Pour pudding mixture over pineapple slices and then sprinkle with brown sugar.
  • Combine cake mix, rest of pudding mix, eggs, water, and oil in large bowl.
  • Beat on medium speed for four minutes.
  • Pour into cake pan.
  • Bake for 55 - 60 minutes or until toothpick comes out clean and cake begins to pull from side of pan.
  • Cool for five minutes and then invert on platter and let sit for one minute.

Pineapple Upside Down Cake

Ingredients:
  • 3/4 Stick Butter
  • 1 Jar Cherries
  • 1 Box White Cake Mix
  • 1/2 Box Brown Sugar (Approx. 1 Cup, Packed)
  • (1) 8 oz. Can Pineapple Rings

Directions:
  • Preheat oven according to cake mix.
  • Mix cake according to package instructions (including ingredients listed on package) and set aside.
  • In large fry pan, melt butter.
  • Mix in brown sugar until thick (add more than 1 cup if necessary).
  • Remove sugar from heat.
  • Pour sugar into 9" round cake pan.
  • Place pineapple rings in brown sugar.
  • Put a cherry inside each ring.
  • Pour batter into cake pan and bake according to mix.
  • Allow to cool and flip out of pan onto plate to serve.

Mini Cheese Cakes

Ingredients:
  • 12 Nilla Wafer Cookies
  • 1/2 Cup Sugar
  • 2 Eggs
  • (2) 8 oz. Packages Cream Cheese, Softened
  • 1 Tsp. Vanilla
  • 1 Can Cherry or Strawberry Pie Filling

Directions:
  • Preheat oven to 325.
  • Line 12 cup muffin tin with papers.
  • Place one cookie in each cup, flat side down.
  • Mix together cream cheese, vanilla, and sugar on medium speed until well blended.
  • Add eggs and mix well.
  • Pour mixture over wafers until 3/4 full.
  • Bake for 25 minutes.
  • Remove from oven and allow to cool.
  • Top with cherry or strawberry pie filling.

Comfort Cake

The "Comfort" in "Comfort Cake" comes from Grandma's dear friend, Southern Comfort.  This one probably isn't good for children.  I also assume you could substitute Irish whiskey, brandy, or dark rum and make a different kind of alcoholic cake.

Ingredients:
  • 1 Package Yellow Cake Mix
  • 4 Eggs
  • 3 1/2 oz. Package Instant Vanilla Pudding
  • 1/2 Cup Cold Water
  • 1/2 Cup Oil
  • 1 Cup Chopped Nuts
  • 1/2 Cup Southern Comfort
  • 1/4 Cup Butter
  • 1/8 Cup Water
  • 1/2 Cup Sugar
  • 1/4 Cup Southern Comfort

Directions:
  • Preheat oven to 325.
  • Combine cake mix, eggs, vanilla pudding, 1/2 cup cold water, oil, chopped nuts and 1/2 cup Southern Comfort and mix on medium speed for two minutes.
  • Pour into greased and floured bundt pan.
  • Bake for 60 minutes or until toothpick comes out clean.
  • Allow cake to cool.
  • Meanwhile, prepare glaze.
  • Melt 1/4 cup butter in sauce pan over medium heat.
  • Add 1/8 cup water and 1/2 cup sugar.
  • Heat until sugar is totally dissolved.
  • Add 1/4 cup Southern Comfort.
  • When cake has cooled, invert onto serving plate.
  • Pour warm glaze over cold cake.
  • Allow to cool again before serving.

Cream Cheese Cake

Ingredients:
  • (2) 8 oz. Packages Cream Cheese, Softened
  • (1) 14 oz. Can Sweetened, Condensed Milk
  • 2 Tsp. Vanilla
  • 1/4 Tsp. Salt
  • 1/2 Tsp. Lemon Juice
  • (1) 9" Graham Cracker Crust

Directions:
  • Whip together all ingredients until somewhat fluffy and well-combined.
  • Spread into crust.
  • Chill in fridge for at least two hours.

Crazy Cakes

I can't figure out what makes this crazy or cakes, as it is only one cake.  I guess the way you prepare the batter is kind of crazy?  Adding vinegar sounds kind of crazy, too.  Maybe if I make it I will have a better idea.

Ingredients:
  • 3 Cups Flour
  • 2 Cups Sugar
  • 1 Tsp. Baking Soda
  • 1 Tsp. Salt
  • 3/4 Cup Oil
  • 2/3 Cup and 2 Tbsp. Baking Cocoa
  • 3/4 Tsp. Vinegar
  • 2 Tsp. Vanilla
  • 2 Cups Cold Water

Directions:
  • Preheat oven to 350.
  • Sift flour, sugar, baking soda, cocoa and salt together into 13" x 9" cake pan.
  • Drizzle oil over sifted mixture.
  • Make three holes in mixture and add vinegar and vanilla to holes.
  • Pour the cold water over the entire mixture.
  • Mix well with a fork until well blended - DO NOT BEAT OR BLEND.
  • Bake for 45 - 60 minutes until toothpick comes out clean.

Cool-N-Easy Chocolate Cake

This one isn't "Cool" because it's hip, it's "Cool" because you freeze it!  No oven required to make the cake.  I imagine this would be great on a hot summer night.

Ingredients:
  • (2) 3 oz. Packages Cream Cheese (Softened)
  • 2/3 Cup Sugar
  • 2 Tbsp. Packed Brown Sugar
  • 1 Tsp. Vanilla Extract
  • 1/8 Tsp. Salt
  • (2) 2 oz. Envelopes Choco-Bake
    • I didn't know what the hell this was either.  You can buy it in stores, or a substitute is melted and cooled unsweetened baking chocolate, ounce for ounce.
  • 1 Cup Heavy Cream, Whipped
  • 1/4 Cup Nuts, Chopped
  • (1) 9" Graham Cracker Crust

Directions:
  • Combine cream cheese, sugar, brown, sugar, vanilla, and salt.
  • Beat until creamy.
  • Blend in choco-bake; mix well.
  • Fold in heavy whipping cream.
  • Spoon mixture into crust.
  • Sprinkle nuts over top.
  • Freeze for two hours and serve.

Mediocre Mayonnaise Cake

I say this one is mediocre because it says, "See other mayo cake" next to it.  The other mayonnaise cake recipe has, "GOOD" written next to it.  All evidence points to this recipe just being so-so.

Ingredients:
  • 1 Fudge Cake Mix
  • 1 1/2 Cups Water
  • 2 Eggs
  • 1/2 Cup Mayonnaise

Directions:
  • Preheat oven to 350.
  • Generously grease and lightly flour 13" x 9" cake pan.
  • In large bowl, combine cake mix, water, eggs, and mayo.
  • Blend and beat as cake mix directs.
  • Pour into greased pan.
  • Bake for 25 - 35 minutes or until toothpick comes out clean.

Cherry Crumble Square

Ingredients:
  • 1 Package Yellow Cake Mix
  • 2 Eggs
  • 1/4 Cup Butter, Melted
  • (1) 15 oz. Can Cherry Pie Filling
  • 1 Package Coconut Pecan Frosting Mix
    • I imagine they don't make this anymore, so if I had to guess I'd say use 1/4 Cup Powdered Sugar, 1/4 Cup Flour, 1/4 Cup Coconut, and 1/4 Cup Chopped Pecans.
  • 2 Tbsp. Melted Butter

Directions:
  • Preheat oven to 350.
  • Combine cake mix, 1/4 cup melted butter, and eggs until just moistened.
  • Pat into greased, 13" x 9" cake pan (greased on bottom only).
  • Top with pie filling.
  • Combine frosting mix with 2 Tbsp. melted butter and sprinkle over cherries.
  • Bake for 30 - 35 minutes.

Dump Cake (Good & Easy)

I don't know if "Dump Cake" sounds good, but I imagine it actually is.  It's called "Dump Cake" because you literally dump all the ingredients into the cake pan.  Also, 1 - 2 sticks melted butter is a pretty big range, but I imagine the more butter you add the more delicious the cake will be.

Ingredients:
  • (1) 20 oz. Can Crushed Pineapple
  • 1 Can Pie Filling (Cherry, Apple, or Blueberry)
  • (1) 18 oz. Package Yellow Cake Mix
  • 1/2 - 1 Cup Chopped Nuts or Shredded Coconut
  • 1 - 2 Sticks Melted Butter

Directions:
  • Preheat oven to 350.
  • Grease 13" x 9" pan.
  • Dump undrained pineapple into pan and spread evenly.
  • Spread pie filling over pineapple and spread evenly.
  • Sprinkle dry cake mix evenly over fruit.
  • Pour melted butter over top of cake mix.
  • Sprinkle with nuts or coconut.
  • Bake for 60 minutes or until cake mix has cooked through.

Grandma Carol's Favorite Coffee Cake

Ingredients:
  • 1 1/2 Cups Flour
  • 2 1/2 Tsp. Baking Powder
  • 3/4 Cup Sugar
  • 1/4 Cup Oil
  • 3/4 Tsp. Salt
  • 3/4 Cup Milk
  • 1 Egg
  • 1/3 Cup Brown Sugar
  • 1/2 Tsp. Cinnamon
  • 1/4 Cup Flour
  • 3 Tbps. Firm Butter

Directions:
  • Preheat oven to 375.
  • Mix flour, baking powder, sugar, oil, salt, milk, and egg until well combined.
  • Pour into greased round cake pan.
  • In small bowl, mix together brown sugar, cinnamon, 1/4 cup flour and butter until crumbly.
  • Spread crumbly mixture over batter.
  • Bake for 25 - 30 minutes or until toothpick comes out clean.

Flaky Kringle (Excellent)

Grandma thought this recipe was most excellent, as the title indicates.  I remember having this as a kid and it was delicious, but it always seemed kind of difficult to make.

Ingredients:
  • 2 Sticks Butter
  • 2 Cups Flour
  • 1 Cup Sour Cream
  • 2 Egg Whites, Beaten
  • 2 Cans Pie Filling (Cherry or Apple)

Directions:
  • Mix together butter, flour, and sour cream to form a dough.
  • Knead until well combined.
  • Separate into four pieces and roll into balls.
  • Wrap each ball in wax paper and refrigerate overnight.
  • Preheat oven to 350.
  • Roll out one ball of dough onto floured board until it is 8" x 16" in size.
  • Brush dough with melted butter and then beaten egg whites.
  • Spread pie filling in center of dough, sparingly.
  • Fold both sides to center and roll ends to hold in filling.
  • Brush top of dough with beaten egg whites.
  • Bake at 350 for 35 minutes or until golden.
  • Makes four kringles (you best have a lot of company coming over).

Coffee Cake

Ingredients:
  • 3/4 Cup Butter
  • 1 1/2 Cup Sugar
  • 2 Cups All-Purpose Flour
  • 2 Tsp. Baking Powder
  • 2 Eggs
  • 1 Tsp. Vanilla
  • 3/4 Cup Milk

Directions:
  • Preheat oven to 350.
  • Mix butter, sugar, flour, and baking powder together.
  • Set aside one cup for topping.
  • Add eggs, milk, and vanilla to remaining sugar mixture.
  • Beat until well-combined.
  • Pour into greased 13 x 9 pan.
  • Sprinkle the topping over the batter.
  • Bake for 25 - 30 minutes or until golden.

Banana Walnut Bread

Ingredients:
  • 2 Cups Flour
  • 1 Cup Sugar
  • 2 Tsp. Baking Powder
  • 1/2 Tsp. Baking Soda
  • 1/4 Tsp. Salt
  • 1 Cup Ripe Bananas, Mashed
  • 1/2 Cup Butter, Softened
  • 3 Tbsp. Milk
  • 2 Eggs
  • 1 Cup Toasted Walnuts, Chopped

Directions:
  • Preheat oven to 350.
  • In large mixing bowl, combine one cup of flour, sugar, baking powder, baking soda, and salt.
  • Add mashed ripe banana, butter, and milk.
  • Beat with an electric mixer on low speed until blended.
  • Beat on high for two minutes.
  • Add eggs and remaining flour; beat until well blended.
  • Fold in walnuts.
  • Divide into two well-greased loaf pans.
  • Bake for 50 - 60 minutes or until toothpick comes out clean.
  • Cool for 10 minutes and remove loaves to wire racks.
  • Wrap and store overnight for easier slicing.
  • You can freeze the loaves for up to one month if wrapped in plastic wrap and placed in freezer bag; thaw at room temperature for one hour before serving.

Strawberry Bread

Ingredients:
  • 2 Cups Flour
  • 3/4 Cup Sugar
  • 1/2 Tsp. Baking Soda
  • 2 Tsp. Baking Powder
  • 1 Tsp. Cinnamon
  • 1/4 Tsp. Salt
  • 2 Egg Whites - Whipped
  • 1 Tsp. Vanilla
  • 1/2 Cup Applesauce - Room Temperature
  • 2 Cups Strawberries, Chopped

Directions:
  • Preheat oven to 350.
  • Prepare bread pan (one large or two small) with cooking spray and flour.
  • In a mixing bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
  • In another bowl, combine egg whites, vanilla, applesauce, and strawberries.
  • Mix dry ingredients with wet ingredients until just moistened.
  • Pour into prepared loaf pan(s) and bake for 35 - 45 minutes or until golden.

Rhubarb Bread

If you aren't familiar, rhubarb is a plant.  The leaves are poisonous, but the stalks are like tart, red celery.  I'm not sure if it is something you'll be able to find at your local grocery store, but good luck!

Ingredients:
  • 1 1/2 Cups Light Brown Sugar
  • 2/3 Cups Vegetable Oil
  • 1 Egg
  • 1 Cup Buttermilk
  • 1 Tsp. Each: Salt, Baking Soda, Vanilla
  • 2 1/2 Cups Flour
  • 2 1/2 Cups Diced Rhubarb
  • 1/2 Cup Chopped Walnuts
  • Separate for Topping: 1/4 Cup Sugar & 1 Tbsp. Softened Butter

Directions:
  • Preheat oven to 350.
  • Combine brown sugar and oil in mixing bowl; beat until smooth.
  • Stir in egg, buttermilk, salt, baking soda, vanilla, and flour.
  • Blend until just moistened.
  • Fold in rhubarb and nuts.
  • Divide mixture into two well-greased bread pans.
  • Combine topping ingredients until crumbly and sprinkle over loaves.
  • bake for 50 - 55 minutes.
